Lemon Garlic Spaghetti

I just made this recipe for dinner tonight. It was DELICIOUS. I found this recipe on Pinterest linked to inomthings.com and it would be delicious either warm or cold. This recipe is for two servings. I, of course had to triple it for my family.

Serves 2

Ingredients:
4oz dry spaghetti (I used whole wheat linguine...same diff)
1/4 c grated Parmesan (the can stuff)
2tsp olive oil
1/2 lemon
2tbsp pine nuts (I didn't have these on hand. It was still delicious, but I'm curious how the nuts would be)
5-6 basil leaves, chopped
1 clove garlic

Heat olive oil in a pan and add chopped garlic. Cook on low until garlic starts to brown on the edges. Immediately remove pan from heat and set aside.

Boil pasta and drain.

In a large bowl, combine basil, pine nuts, juice from lemon, and Parmesan cheese. Add garlic bits w/ oil to mixture. Mix and toss w/ pasta. sprinkle w/ black pepper to taste.

Florence

After baseball practice we headed out to Casa Grande, dropped off Tony and Andrew with their mom, and headed over to Florence to check out a winery out there as a possible wedding location. My mom's side of the family has a long history in Florence. We visited our family plot at the cemetary and visitied Nana's old house which is now a historical landmark! Posting this to share with family.
